This Indian/Pakistani chopped salad combines juicy tomatoes, crisp cucumbers, pungent onions, herby coriander, and a tangy citrus dressing, making it the perfect accompaniment to rich curries, grilled meats, or even picnic lunches. 📝 Fresh Ingredients You’ll Need

- 1 medium cucumber, peeled and finely diced (optional)
- 2 medium tomatoes, deseeded & finely diced
- ½ small red onion, finely chopped
- 1 green chili, finely chopped (optional; adjust to heat preference)
- Handful of coriander (cilantro), finely chopped
- Juice of ½ a lemon (or about 1 tablespoon) or 1‑1½ tbsp mild vinegar
- ½ tsp Salt, to taste
- ¼ tsp sumac cayenne or pomegranate powder (optional)

Prep the vegetables
Wash all the vegetables. Peel cucumber, deseed tomatoes. Chop cucumber, tomato, onion, and chili (if using) into evenly sized small cubes so texture is balanced. -
Combine
In a bowl, mix cucumber, tomatoes, onion, green chili. -
Dress
Add chopped coriander. Squeeze in lemon juice (or vinegar). Add salt and optional spices. Toss gently so everything is coated. - Rest briefly
Let the salad sit for about 5 minutes so the flavours meld. The salt also draws out moisture from tomatoes; if the salad becomes watery, drain some liquid or use it as a flavourful addition.
