Prep time: ≈ 10‑15 minutes

Cook Time:  None

Serves : Serves about 4 as a side dish

📝 Fresh Ingredients You’ll Need

    • 1 medium cucumber, peeled and finely diced (optional)
    • 2 medium tomatoes, deseeded & finely diced
    • ½ small red onion, finely chopped
    • 1 green chili, finely chopped (optional; adjust to heat preference)
    • Handful of coriander (cilantro), finely chopped
    • Juice of ½ a lemon (or about 1 tablespoon) or 1‑1½ tbsp mild vinegar
    • ½ tsp Salt, to taste
    • ¼ tsp sumac cayenne or pomegranate powder (optional)

👩‍🍳Instructions:

    • Prep the vegetables
Wash all the vegetables. Peel cucumber, deseed tomatoes. Chop cucumber, tomato, onion, and chili (if using) into evenly sized small cubes so texture is balanced.

    • Combine
In a bowl, mix cucumber, tomatoes, onion, green chili.

    • Dress
Add chopped coriander. Squeeze in lemon juice (or vinegar). Add salt and optional spices. Toss gently so everything is coated.

    • Rest briefly
Let the salad sit for about 5 minutes so the flavours meld. The salt also draws out moisture from tomatoes; if the salad becomes watery, drain some liquid or use it as a flavourful addition.
    • Serve
Best when fresh. Serve as a side with curries, biryani, grilled meats, or sow over wraps/sandwiches.

📝 Tips & Variations

    • To mellow the onion’s bite: soak chopped onion in cold water for a few minutes, then drain.

    • Add extra crunch: diced bell peppers, grated carrot, radish.

    • Herb twist: mix cilantro + mint combo for fresh herbal notes.

    • Spice options: use chaat masala for a tangy, earthy seasoning. A pinch of roasted cumin powder also works well.

    • Dressing swaps: lemon juice vs mild vinegar; adjust based on what you have.
