If you’ve been scrolling through Instagram or YouTube Shorts lately, you’ve probably seen Chicken Malai Patties going viral — creamy, juicy, melt-in-the-mouth patties that look fancy but are surprisingly easy to make at home. These patties are perfect for iftar snacks, party starters, burgers, wraps, or tea-time treats.

In this blog post, I’m sharing a tried-and-tested viral Chicken Malai Patties recipe with tips to keep them soft, juicy, and full of flavor — just like the ones trending online. *the recipe video link will be available once uploaded below the recipe – please keep a look out for it

Here’s a flavor‑packed version pulled from trending recipes, tried and tweaked by myself to suit my palette so it’s easy to follow. Let’s get cooking!

📝 Ingredients

For the Chicken patties mix:

    • 1 cup boiled and shredded chicken 
    • 2 cup boiled potatoes (cubed and mashed as per preference)
    • 1 tsp ginger / garlic paste 
    • 1 tsp garam masala powder
    • 1 tsp chili flakes
    • 1/2 tsp chili powder
    • 1/2 tsp cumin seeds
    • 1/2 tsp ground cumin seed powder
    • 1 tsp pepper powder
    • ¼ cup fresh cream (malai)
    • 1+1/2 tsp Salt (adjust per taste)
    • 2 tsp coriander leaves (chopped)

For the Coating:
    • 1 Egg (beaten)
    • 1/4 cup breadcrumbs (as per requirement)

To fry:
    • Deep pan or shallow fry pan enough to cover half of the patties 
    • Oil for frying (as required)

👩‍🍳Instructions:

    • Prepare the Chicken and Potatoes Mixture 
      In a large bowl: combine all the ingredients for the chicken patties and mix well.  Now is the time to taste the mixture. add extra salt and chili according to your preference.  Mix well until creamy. if yo find the mixture dry, add more cream. 

    • Shape the patties 
      Grease hands and shape into medium-sized patties. you Can use your hand or with the help of a spoon or scoop, take a small amount of the chicken patties mixture and shape into flat patties to give a uniform shape to all patties. Shape them according to the size you would like. Place them on a flat tray and continue making the rest of the patties until the mixture has finished.  Chill for 20–30 minutes for best results.  Dip each Pattie into the egg wash and finally coat with breadcrumbs.  Repeat this until all patties are covered with egg and breadcrumbs (at this stage, you can freeze these patties*). 
    • Heat the oil
      Heat oil in your saucepan over low‑to‑medium heat. Oil should be warm NOT hot or smoking. To do a temperature check, check the oil by taking a wooden skewer and dip the tip into the oil, you should see small bubbles around the skewer. 

    • Cook the chicken patties
      Heat the oil in your pan until the oil is medium hot.  If the oil is too hot, let it cool down as the patties will cook too quickly and the breadcrumb will burn.  There should be enough oil in your pan that should cover the patties halfway. Shallow fry patties for 2-3 minutes per side until golden brown.  Cooking time can vary depending on the heat of your pan, but do not overcook as the mixture is already cooked from inside so all you are are doing is heating it up and cooking the breadcrumb’s to give it a good golden finish.  Do not press while frying — this keeps them juicy.

    • Take out & Serve 
      Take out the cooked chicken patties once they are lightly golden brown in colour and serve (see notes below)

    • Air Fryer Version
      Preheat air fryer to 180°C (356°F) – Brush patties lightly with oil and air fry 180 for 2-3 mins each side.

📝 Tips, Notes & Variations

  • Use chicken thigh for extra juiciness
  • Substitutions : Coriander can be substituted with fresh Parsley. Fresh cream can be substituted for mayonnaise.

  • Adjust the Heat: add fresh green chilies’ to increase the heat however as this contains cream, the chili should not over power the flavor of the cream.  
  • Do not overcook

🌟 How to Use / Serving Suggestions

  • Serve as party starters with dips – these patties can be served on there own or as part of another starter.  

  • Serve as a starter with garlic mayonnaise or with chutneys as mentioned below.  

  • Serve with Green Chutney, Mint chutney, Imli chutney or your preferred sauce.

  • Use as a burger patty with lettuce and cheese or in a Wrap in paratha or tortilla.

     


❄️ Tips for Freezing

    • Once the chicken patties are made at shaping and coating stage, place on a flat tray and place in the freezer.  Once frozen, remove from the trays and place in a Ziplock bag or container.

    • These can be stored and frozen for up to 1-2 months 
  •  
    • To use, take out the patties and shallow fry in oil as mentioned above, heat the patties once cooked in the microwave for extra 1 minute to ensure the pattie is fully defrosted from inside.

Absolutely. In fact, these are perfect for busy moms and a great time server when preparing for dinner invitations, Ramadan and iftar parties. Make the day before and even better on the day!
