If you’re anything like me, you know the power of a good chilli oil. A spoonful can transform noodles, dumplings, stir-fries, eggs, or even pizza. This simple homemade version is deeply flavorful, customizable, and free from preservatives. Plus, it makes a fantastic edible gift!

🔥 Ingredients
For the Chilli Base:

3 tbsp crushed red pepper flakes (adjust to your heat tolerance)

1 tsp Sichuan peppercorns (optional but recommended for that signature numbing heat)

1 tsp paprika (for color – use smoked for extra depth)

1 small piece of star anise (optional)
-
1/2 tsp ground ginger (or 1 tsp fresh grated)
-
1/2 tsp garlic powder (or 2 cloves fresh minced garlic)

1/2 tsp salt

1/2 tsp sugar
For the Oil:

1 cup neutral oil (like canola, vegetable, grapeseed, or peanut oil)

Prep the Chilli Mix:
In a heatproof bowl or jar (glass or metal), combine the red pepper flakes, Sichuan peppercorns, paprika, ginger, garlic, salt, and sugar. If you’re using star anise, toss that in too. -
Heat the Oil:
In a small saucepan, pour in the oil and gently heat over medium-low for about 4–5 minutes. You’re aiming for around 180°C / 350°F – hot, but not smoking.
To test: Drop in a small piece of garlic or a wooden chopstick — it should sizzle gently. -
Infuse & Pour:
Once hot, carefully pour the oil over the chilli mixture. It will sizzle and bubble — that’s good! Stir gently to make sure everything is coated and the flavors start releasing. -
Cool & Store:
Let the oil cool completely. Once cooled, transfer to a clean, airtight jar. It’s ready to use right away, but tastes even better after a day or two.

Add-ins: Try bay leaves, cinnamon sticks, or black cardamom pods while heating the oil for a more complex flavor.

Adjust the Heat: Use Korean chilli flakes (gochugaru) for a milder version, or add crushed bird’s eye chillies for extra heat.
