Ingredients for Aloo Ki Katliyan

Prep time: ≈ 5 minutes

Cook Time:  25 – 30 minutes

Serves : Serves about 4 as a breakfast dish

📝 Fresh Ingredients You’ll Need

    • 4 medium Potatoes, peeled and sliced into thin slices
    • 4 tbsp / 1/3 cup mustard oil or vegetable oil
    • 1 small red onion, finely chopped
    • 2 medium tomatoes, deseeded & finely diced (optional)
    • 1 tsp cumin seeds (jeera)
    • ½ tsp Asafetida (hing)
    • ½ tsp turmeric powder
    • 1 tsp red chili powder (adjust to taste)
    • ½ tsp chaat masala powder
    • 1 tsp Salt (adjust to taste)
    • 2-3 fresh green chili, finely chopped (optional; adjust to heat preference)
    • Handful of coriander (cilantro), finely chopped
    • Water as required

👩‍🍳Instructions:

    • Prep the potatoes 

      • Wash and peel the potatoes.

      • Slice them into thin round slices (katliyan).

      • Soak in water for 5 minutes, then drain and pat dry.
        This helps remove excess starch and makes them crispier.

    • Heat the Oil

      • Heat oil in a wide pan or kadhai.

      • Add cumin seeds and let them crackle.

      • Add garlic until it turns light brown (careful not to burn it)

    • Fry the Potatoes until Crispy

      • Add the potato slices in a single layer and fry for 2 mins. Stir occasionally and let the potatoes fry until golden brown and crispy
      • If you are adding tomatoes, add it now and saute for 2 mins

      • Sprinkle turmeric, salt, red chili powder, and coriander powder.

      • Mix gently so the slices don’t break.
    • Cook the Potatoes

      • Cover & cook on medium heat for 4 – 5 mins until potatoes are fully cooked (add water if needed)

      • Add the fresh green chili if using.

    • Garnish & Serve
      • Garnish with fresh coriander.

      • Serve hot with roti, paratha, or dal.
