- 4 medium Potatoes, peeled and sliced into thin slices
- 4 tbsp / 1/3 cup mustard oil or vegetable oil
- 1 small red onion, finely chopped
- 2 medium tomatoes, deseeded & finely diced (optional)
- 1 tsp cumin seeds (jeera)
- ½ tsp Asafetida (hing)
- ½ tsp turmeric powder
- 1 tsp red chili powder (adjust to taste)
- ½ tsp chaat masala powder
- 1 tsp Salt (adjust to taste)
- 2-3 fresh green chili, finely chopped (optional; adjust to heat preference)
- Handful of coriander (cilantro), finely chopped
- Water as required
