Today’s recipe is for all the keema (minced meat) lovers who crave something rich, aromatic, and utterly satisfying. This Dum Ka Keema is slow-cooked to perfection using Shan Bihari Kebab Masala, giving it that signature smoky, robust flavor without complicated prep.

🌿 What is Dum Ka Keema?

“Dum” means slow cooking in a sealed pot, allowing flavors to develop deeply and naturally. Keema (minced meat) absorbs spices beautifully, and when paired with Shan Bihari Kebab Masala, it transforms into a bold, slightly smoky, restaurant-style dish you can easily recreate at home.

🛒 Ingredients

For the Marination:

    • 500g minced meat (lamb, beef or mutton)
    • 2 medium onions, finely sliced and fried (reserve 2 tbsp for the end garnishing)
    • 2 tsp ginger-garlic paste
    • 2 tsp Papaya paste or 1 tsp meat tenderiser 
    • ½ cup yogurt (approx 100g)
    • ½ packet or 3 tbsp of Shan Bihari Kebab Masala
    • Salt (included in the packet but add if needed)

For the Base: 

    • ½ cup Oil or ghee
    • 2 Cloves
    • 2 Peppercorns
    • 1 bay leave

For the Garnishing:

    • 2 green chilies, chopped
    • 2 tbsp fried onions
    • 2 tbsp lemon juice
    • Fresh chopped coriander leaves
    • 1 small piece of coal (optional, for smoke infusion)

Tips:
    • Use freshly fried onions rather than store bought fried onions. i find this sticks to the bottom of the pan.  
    • Greek yogurt works beautifully for a thicker, creamier texture.

👩‍🍳Instructions:

Step 1: Prepare the Marination

Bring together all the ingredients listed in the marination and mix it well.

Cover and let this marinate overnight or for a minimum of 2 hours.

Step 2: Cook the Keema

Add Oil / Ghee to a non stick pan, add the whole spices, saute this for 2 mins.

Lower the heat and carefully add the marinated minced meat to the pot.

Now cook this on medium to high heat.  Break up any lumps and sauté until the meat changes color and releases moisture.

When most of the water has evapourated and you see the oil has surfaced to the top, cover and cook on low heat (dum) for 20–25 minutes (let the flavors develop slowly).

Stir occasionally in intervals of 5 mins so that it does not burn at the bottom ( this will happen if using store bought fried onions).

Depending on what meat you have used, after 20mins your mince should have been cooked by now. Check as different meats have different cooking times.

Step 3: Garnish your dish and bring Freshness

Add chopped green chilies, fried onions, lemon juice and chopped coriander leaves. Taste and adjust seasoning if needed.

Step 4 (Optional but Recommended): Dhungar (Smoke) Method

Heat a small piece of coal until red hot. Place it in a small bowl inside the pan, drizzle a little oil over the coal, and immediately cover the pan tightly for 3–4 minutes. This gives that authentic smoky finish.

    • Butter naan

    • Laccha paratha

    • Steamed basmati rice

    • Cooling cucumber raita

    It also makes a delicious filling for wraps and sandwiches the next day.

    • Let the keema rest for 10 minutes after cooking — flavors intensify beautifully.
    • If you prefer a slightly gravy-style keema, add ¼ cup warm water before the dum stage.
