Ramadan evenings are all about the moment when the table fills with comforting foods after a long day of fasting. In many homes, pakoras are a must at iftar – crispy, warm, and perfect with chutney and a cup of chai.

But let’s be honest: after fasting all day, the last thing anyone wants is to measure a dozen spices before frying pakoras.

That’s exactly why I created this Ramadan Pakora Pre-Mix. It’s a simple dry mix you can prepare in advance and store in your pantry. When iftar time arrives, all you need to do is add water and your favourite vegetables, and you’ll have golden, crispy pakoras ready in minutes.

It’s convenient, flavourful, and perfect for busy Ramadan evenings. Having a Ramadan Pakora Pre-Mix ready in your pantry makes iftar preparation so much easier. It saves time while still giving you the authentic homemade flavour everyone loves.

I have 2 Pakora mix’s available. My Instant Pakora Mix recipe (video poste below) is for usual days but this Ramadan Pakora Pre-mix recipe is especially made for Ramadan. Do try my both recipes and use which ever one you prefer.


Ingredients for Ramadan Pakora Pre-Mix

  • 2 cups gram flour (besan)
  • 2 tbsp rice flour (for extra crispiness)
  • 1 tbsp cornflour
  • 1 tsp salt
  • 1 tsp red chilli powder
  • 1 tsp turmeric powder
  • 1 tsp roasted cumin powder
  • 1 tsp coriander powder
  • ½ tsp garam masala
  • 1 tsp dried fenugreek leaves (kasuri methi)
  • ½ tsp baking soda (optional – add when preparing if preferred)
  • 1 tsp dried crushed chilli flakes (optional)

How to Make the Pre-Mix

  1. Add all the dry ingredients to a large bowl.
  2. Mix well until everything is evenly combined.
  3. Transfer the mixture to an airtight jar or container.
  4. Store in a cool, dry place.

This mix will stay fresh for up to 3 months if stored properly.


How to Make Pakoras Using the Pre-Mix

When you’re ready to make pakoras for iftar:

Ingredients

    • 1kg Gram flour (besan)
    • 3 tbsp chilli flakes
    • 3 tbsp red chilli powder
    • 4 tbsp salt
    • 1 tsp Turmeric powder
    • 2 tbsp Fenugreek leaves (Kusuri methi)
    • 6 tbsp Rice Flour
    • 6 tbsp Corn Flour
    • 6 tbsp Roasted cumin seeds
    • 6 tbsp Roasted Coriander seeds
    • 1 tbsp Carom seeds (ajwain)
    • 2 tbsp Pomegranite powder
    • 3 tbsp Semolina fine (optional)
    • Oil for frying

Instructions

  1. Add 1 cup of the pre-mix into a bowl.
  2. Slowly add water while mixing to create a thick batter.
  3. Add sliced vegetables and mix until coated.
  4. Heat oil in a deep pan over medium heat.
  5. Drop spoonfuls of the mixture into hot oil.
  6. Fry until golden brown and crispy.
  7. Remove and place on kitchen paper to drain excess oil.

Serve hot with mint chutney, tamarind chutney, or chilli sauce.


Pakora Tips for Perfect Crispiness

  • Add rice flour for extra crunch.
  • Keep the batter thick, not runny.
  • Fry on medium heat so the pakoras cook evenly.
  • Don’t overcrowd the pan.

  • Vegetables: Try adding onions, spinach, potatoes, or even cauliflower for a mix of textures and flavors.
  • Herbs: Fresh herbs like coriander or kasuri methi (dried fenugreek leaves) can give your pakoras an aromatic touch.
