🥟 How to Roll Spring Rolls from Pastry Sheets (For Frying)

🛒 What You’ll Need:

  • Spring roll pastry sheets (available frozen in most Asian grocery stores)
  • Filling of your choice (vegetable, chicken, shrimp, pork, etc.)
  • Flour paste (1 tbsp flour + 2 tbsp water, mixed to seal rolls)
  • Clean surface for rolling
  • Damp towel (to cover unused sheets and prevent drying)

1. Prepare Your Workspace

Set out a clean, damp cloth or cutting board. Have all your fillings prepped and laid out in front of you.

2. Thaw the Pastry Sheets

If using frozen wrappers, thaw them in the fridge for a few hours or leave them at room temperature for 30–60 minutes. Keep the unused sheets covered with a damp towel to prevent drying.

3. Prepare the Filling

Cook and cool your filling before rolling. This can be a mix of:

  • Shredded cabbage or carrots
  • Minced meat, chicken or tofu
  • Glass noodles

Let the filling cool completely before using to prevent soggy wrappers.

4. Place the Wrapper

Lay one wrapper on a clean, dry surface in a diamond shape (so it looks like a diamond, not a square – see picture below).

5. Add Filling

Spoon about 1–2 tablespoons of filling near the bottom corner of the diamond, about 1 inch from the edge. Shape the filling into a short log.

6. Fold and Roll

  • Step 1: Fold the bottom corner over the filling.
  • Step 2: Fold the left and right corners inward like an envelope.
  • Step 3: Roll the wrapper tightly toward the top corner, keeping it firm and snug.
  • Step 4: Dab the top corner with the flour paste and press gently to seal the roll.

7. Repeat

Repeat the process for all your wrappers. Keep rolled spring rolls covered with a towel to prevent drying before cooking.

8. Cook the Spring Rolls

  • Deep fry: Heat oil to 350°F (175°C) and fry for 3–5 minutes until golden brown.
  • Air fry or bake: Brush with oil and cook at 400°F (200°C) for 10–15 minutes, flipping halfway.

  • Don’t overfill—less is more, too much filling will cause them to burst.
