1kgboneless chicken breast pieces or 4 chicken breats 4 chicken breasts cut-up into 1" pieces
4clovesfinely chopped garlic clovesused minced garlic if preferred
1/2 tsp Red chilli flakes(optional)
1/4tspCrushed Black Pepper (finely or crushed)optional
1tspsalt (season to taste)
1 teaspoon Italian seasoning
1/2cupTomatoes chopped
2cupsBroccoli florets
2cupsBaby Spinach
1/2cupgrated cheese of your choice (mozzarella, cheddar, parmesan, jack etc.)
4ozcream cheese
Instructions
In a skillet, lightly heat 3tbsp of olive oil
Add the chopped chicken breasts. Cook until the chicken its changed color slightly.
Add the chopped garlic and saute for 1 min or until its fragrant ( be careful not to burn it)
Add the Italian seasoning, crushed red pepper, red chilli flakes, salt & pepper. Sautee for approx. 4-5 minutes or until chicken is cooked through.
Add the chopped tomato, broccoli, spinach and mix well (you can cover the skillet with a lid at this point to speed up the process).
Add the grated cheese and cream cheese. Mix well & cook for another 3-4 minutes or until the broccoli is cooked through (different vegetables may take a little longer to cook so adjust the time accordingly)
Serve with cooked pasta , vegetable noodles or rice .
