Serve it on crispy dosas, sandwiches or even rice — this spicy roasted tomato chutney is your new go-to. Made with roasted tomatoes, garlic, and a burst of Indian spices, it’s tangy, smoky, and ready in under 30 minutes. No blender needed, just bold, homemade flavor in every spoonful. Serves : About 1 cup (serves 4‑6 as a condiment or dip)
📝 Ingredients You’ll Need

- 4 -5 Ripe Tomatoes (medium to large)
- 6‑8 Garlic cloves
- 1‑2 Green chilies (or more, to taste)
- ½ medium, finely chopped Onion
- 1‑2 tablespoons Mustard oil (or other oil you prefer)
- ½ tsp (adjust to heat level) Kashmiri Red chili powder / paprika
- ½ tsp Salt, to taste
- ¼ tsp Roasted cumin powder (optional)
- Handful of Fresh coriander (cilantro) finely chopped
- Lemon Juice from about ½ lemon
- ½ to 1 tsp Sugar / jaggery (optional) (if you want a sweet‑tangy balance)
👩🍳Instructions:
- Roast/Blister Tomatoes & Garlic
Heat oil in a pan. Add garlic cloves first until they start changing color. Then place halved tomatoes in the pan, cover, and let them cook/roast until the skin blisters and begins to peel. This step adds smoky flavor. Alternatively, charr the tomatoes over a high flame ( as pictured).

Once roasted well, remove from heat and let them cool a bit. Peel off tomato skins if you want a smoother texture.

Mash the tomatoes and roasted garlic (you can use a blender for smooth or leave a bit chunky for texture). Add chopped onions, chopped green chilies.

Stir in salt, black pepper, kashmiri red chilli powder, & roasted cumin powder (if using). Mix with lemon juice for brightness.

Add chopped coriander. Taste and adjust — maybe more lemon, more heat, or more salt.
