My Rescued version of Suji Halwa
This quick cheat is so pleasing knowing you’ve not wasted food. Especially during the festive periods when Indian sweets are distributed among family and friends.
INGREDIENTS
Gulab Jamun sugar syrup (chashni)
1 cup Semolina (Suji / Rava )
Pinch of cardamom powder
1/2 block of butter
3 Tbsp. golden raisins
Food colour* (optional)
Chopped nuts, pistachios, almonds to garnish (optional)
*You can use whatever food color you like or can leave it plain. The color just makes it prettier
INSTRUCTIONS
- Separate the sweet syrup and heat this up on a low flame and add food coloring if you prefer (you can discard the Gulab jamun).
- Add the cardamom powder and semolina to a thick saucepan or skillet and gentle dry roast this until the color is slightly light brown.
- Add half of the butter to the pan and roast slightly.
- Now add the sweet syrup slowly and mix well to remove any lumps (be careful as the mixture may start to splatter when adding the syrup).
- Add the remaining butter and nuts which is optional and mix well.
- the mixture will start to thicken as the semolina will absorb the syrup.
- Cover the pan with a lid and leave on slow gas for 10 mins (check midway after 5mins and give it a quick stir).
- switch the gas off and give it another stir.
- Finally, garnish with nuts (optional) and serve hot.
