A Quick & easy no-fuss meal that’s ready within 15-minutes

This complete nutrition-packed meal will fill you up for hours. With easy to find ingredients such as chicken breasts, broccoli, and spinach, this dish will surely satisfy your whole family.

The recipe offers flexibility by allowing the substitution of the main protein with options like chopped chicken thighs, steak, or shrimp, providing endless possibilities to suit various preferences. Add red bell peppers, asparagus, sliced carrots, diced bacon, or your favorite veggies to tailor it to your own liking.

Try this creamy cheesy chicken with cooked pasta, rice, OR zucchini noodles or cauliflower for a low-carb keto dinner.

INGREDIENTS  

  • 3 tbsp. Olive oil
  • 1 kg boneless chicken breast pieces or 4 chicken breast’s 4 chicken breasts cut-up into 1″ pieces
  • 4 cloves finely chopped garlic cloves used minced garlic if preferred
  • 1/2 tsp Red chilli flakes (optional)
  • 1/4 tsp Crushed Black Pepper (finely or crushed) optional
  • 1 tsp salt (season to taste)
  • 1 teaspoon Italian seasoning
  • 1/2 cup Tomatoes chopped
  • 2 cups Broccoli florets
  • 2 cups Baby Spinach
  • 1/2 cup grated cheese of your choice (mozzarella, cheddar, parmesan, jack etc.)
  • 4 oz cream cheese

INSTRUCTIONS 

  • In a skillet, lightly heat 3tbsp of olive oil
  • Add the chopped chicken breasts. Cook until the chicken its changed color slightly.
  • Add the chopped garlic and sauté for 1 min or until its fragrant ( be careful not to burn it)
  • Add the Italian seasoning, crushed red pepper, red chilli flakes, salt & pepper. Sautee for approx. 4-5 minutes or until chicken is cooked through. 
  • Add the chopped tomato, broccoli, spinach and mix well (you can cover the skillet with a lid at this point to speed up the process).
  • Add the grated cheese and cream cheese. Mix well & cook for another 3-4 minutes or until the broccoli is cooked through (different vegetables may take a little longer to cook so adjust the time accordingly)
  • Serve with cooked pasta , vegetable noodles or rice .
