Spaghetti Bolognese is the kind of dish that feels like home, and mastering a delicious spaghetti bolognaise can make dining even more delightful. Whether you’re recreating your grandmother’s version or making it your own, it’s a recipe that always satisfies. Whether you’re cooking for family, prepping for the week, or just craving a cozy dinner, this classic Italian-inspired meal delivers rich flavour and ultimate comfort.

In this blog post, I’ll walk you through my version of this super family-friendly Spaghetti Bolognese recipe, share tips for perfecting the sauce, and answer common questions about the dish. You can use fresh or store bought ingredients however fresh ingredients will elevate the taste of the dish.  I use store bought ingredients when I’m short of time and it works just as well. This really is my family favorite

Serves: 4

📝 Ingredients

  • 500g (1 lb) ground mince beef (or mince of your choice)
  • 2 tbsp olive oil or any oil of your choice
  • 1 medium onion, finely chopped
  • 2 tsp ginger garlic paste or 2 garlic cloves and 1/2 inch of fresh ginger grated,
  • 2 tbsp tomato paste
  • 2 tins x 400g canned chopped tomatoes (400g) / 6 large tomatoes liquidised
  • 1 +1/2  tsp Salt (adjust to taste)
  • 1/4 tsp pepper (adjust to taste)
  • 1/2 tsp Chilli powder
  • 2 tsp Coriander powder
  • 1/2 tsp Turmeric powder
  • 1/2 teaspoon sugar
  • 1 tsp of dried herbs or 1 tablespoon of fresh herbs of choice (rosemary, parsley, oregano)
  • 1 carrot grated (optional)
  • Celery (optional)
  • 2 cups of pasta water
  • 400g (14 oz) spaghetti
  • Fresh basil or parsley (for garnish)
  • Grated Parmesan, to serve

👩‍🍳Instructions:

Step 1: Sauté the Base

Heat oil in a large pan over medium heat. Add the chopped onion, garlic, and any veggies like carrots and celery. Cook for 5–7 minutes until softened.

Step 2: Brown the Meat

Add the ground beef. Cook until browned all over, breaking it up with a wooden spoon.

Step 3: Add Flavor

Stir in the tomato paste and cook for 3–5 minutes to reduce slightly.

Step 4: Simmer the Sauce

Add the canned tomatoes, oregano, basil, and season with salt and pepper and the other spices. Bring to a simmer, then reduce heat and cook covered for 30 minutes, stirring occasionally.

Step 5: Cook the Pasta

While the sauce is simmering, cook spaghetti in a large pot of salted boiling water and a splash of oil and cook according to package instructions. Drain and set aside. Reserve the pasta water for sauce ( this will help bind the sauce together). 

Step 6:Adjust your sauce

Add 2 cups of reserved pasta water to adjust the consistency of your pasta sauce (I usually use 2 cups here).  Simmer this further for another 10-15 mins until you see the oil floating on top. 
 
Serve

Plate the spaghetti, top with generous spoonful’s of Bolognese sauce, and finish with grated Parmesan and fresh herbs.


🔥Tips for the Best Spaghetti Bolognese

1. Slow Cook for Depth

Let your Bolognese simmer on low heat for at least 45 minutes—ideally longer (1–2 hours if you have time). The longer it simmers, the more developed and mellow the flavors become.

2. Add a Splash of Milk

Traditional Bolognese often includes a bit of milk or cream near the end of cooking to mellow out the acidity and create a richer, silkier sauce. Add 2–3 tbsp of whole milk 10 minutes before serving.

3. Go Heavy on Aromatics

A proper soffritto (onion, carrot, celery) base gives the sauce a classic, earthy undertone. Make sure the veggies (if using any) are finely diced and cooked down until soft before adding meat.

4. Salt at Every Stage

Lightly season the veggies (if using any), then the meat, then the sauce as it cooks. This builds layers of flavor rather than just salting at the end.

5. Use Quality Tomatoes

A good canned tomato makes a big difference. If your tomatoes are too acidic, add a pinch of sugar to balance the flavor. I always use canned tomatoes and they work just as well.

6. Cook Pasta Al Dente

Don’t overcook your spaghetti! Aim for a firm bite so it holds up when tossed with the hot sauce. Reserve a bit of pasta water to loosen the sauce if needed.

7. Finish Pasta in the Sauce

Instead of pouring the sauce over the pasta, toss drained spaghetti directly into the pan with the sauce for a minute. This helps it coat evenly and absorb flavor.

8. Garnish Like a Pro

Top with freshly grated Parmesan, a drizzle of olive oil, chopped parsley or basil, and a crack of black pepper. It makes all the difference visually and flavor-wise. 

9. Spice it up 

Sprinkle some drops of Tabasco sauce if you like that fiery spicy kick.

Pair this dish with garlic bread, or a crisp green salad.

  • Fridge: Store leftover sauce in an airtight container for up to 4 days.

  • Freezer: Freeze sauce for up to 3 months. Thaw overnight in the fridge and reheat gently on the stove.


❓ FAQs

Can I use other types of meat?
Yes! any meat or even lentils (for a vegetarian version) works well.

What makes Bolognese different from regular meat sauce?
Bolognese is typically richer and slow-simmered.

Can I make this ahead of time?
Absolutely. In fact, the sauce tastes even better the next day! You can make the spaghetti sauce in large batches and freeze into small containers.
